Chocolate Cashew Bark
2 cups raw unsalted cashews
1 cup dark chocolate chips, (I use sugar free lily's)
1 tablespoon coconut oil
Add the cashews to a sheet tray and place into a 375F oven for about 7 minutes until golden brown. Let cool.
Add the chocolate and the coconut oil to a medium glass bowl and microwave for 45 seconds. Stir until all chocolate chips are melted.
Add the cooled roasted cashews to the chocolate and mix until cashews are covered in chocolate. Transfer cashews to a parchment paper lined sheet tray, sprinkle with sea salt and place into the freezer for at least 20 minutes. Break into pieces and enjoy!
Store in an airtight container, in the freezer for up to 3 months!
