Pumpkin Chia Pudding
Makes 4 servings
4 tablespoons chia seeds
1 14oz can coconut milk
1 teaspoon pumpkin pie spie
1/2 cup canned pumpkin
4 tablespoons maple syrup
4 scoops collagen powder, optional
coconut yogurt, optional
In a medium bowl, combine all the ingredients and whisk together until no clumps.
Cover and let the mixture sit on the counter top for an hour.
After the pudding has set, stir and taste to adjust sweetness.
Divide the Pumpkin Chia Pudding into serving bowls or glasses and top with additional pumpkin pie spice and a dollop of coconut yogurt, if desired. Enjoy!
