Paleo Ranch Chicken Bites
Makes about 40 bites
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 large bag or 2 cups Jackson's Ranch or BBQ Chips
1 cup tapioca starch/flour
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
1/2 teaspoon salt
coconut, avocado or olive cooking spray
ranch, bbq sauce or any dipping sauce you like
Preheat your oven to 425°F and line a baking sheet with parchment paper.
In a shallow bowl, combine tapioca starch, onion powder, garlic powder, paprika, and salt. Whisk together.
In a separate bowl, beat the eggs until well combined.
In a food processor, crush the sweet potato chips into fine crumbs and place into a bowl.
Take each piece of chicken and coat it evenly with the tapioca starch mixture, ensuring all sides are covered. Shake off any excess.
Dip the coated chicken into the beaten eggs, making sure to coat it completely.
Next add about 10 bites at a time to the ground sweet potato chips, pressing gently to adhere the chips to the chicken. Ensure each piece is evenly coated. Repeat for remaining chicken pieces.
Place the coated chicken bites on the baking sheet, leaving some space between each piece.
Lightly spray the tops of the chicken bites with cooking spray.
Bake in the preheated oven for 20 minutes, flipping the chicken bites halfway through the cooking time to ensure even browning.
Once the chicken bites are golden brown and cooked through, remove them from the oven. Serve with ranch, BBQ sauce or any dipping sauce you like!
