Maple Dijon Roasted Brussel Sprouts
Makes 4 servings
1 lb Brussels sprouts, trimmed and halved
2 tablespoons olive oil
1/2 teaspoon salt
2 tablespoons Dijon mustard
2 tablespoons maple syrup
Preheat the oven to 425°F.
In a small bowl, whisk together dijon, olive oil, 1 tablespoon maple syrup and until well combined.
Place the halved brussels sprouts on the sheet tray and toss with the dijon sauce until the sprouts are thoroughly coated with the sauce, placing the cut side down.
Roast for 30 minutes, flipping the brussels sprouts halfway. The sprouts should be golden brown and crisp on the edges.
Remove from the oven, toss with the remaining tablespoons of maple syrup and enjoy!
