Grain Free Blueberry Muffins
Ingredients
1 c almond flour
1/2 c coconut flour
1/2 c tapioca flour
1/2 tsp baking soda
1/2 tsp himalayan salt
1 tsp cinnamon
1 scoop collagen powder, optional
2 eggs (or 2 flax egg)
3/4 c maple syrup or honey
1/3 c any non dairy milk
1/4 c coconut oil, melted
1 tsp vanilla extract
1 tbs lemon juice
1 tbs lemon zest
1 c blueberries
Directions
- Whisk together all the dry ingredients in a bowl.
- In another bowl, whisk together all the wet ingredients and then add the wet to the dry to combine.
- Gently fold in blueberries and scoop into muffin liners (fill batter all the way to the top for those yummy muffin tops)
- Bake at 350F for about 30 mins until a toothpick comes out clean.
- Let cool and enjoy!
