Peach, Tomato & Avocado Salad

Makes 4 servings
Ingredients
1 large ripe peach, cut in half and then in wedges
1 ripe nectarine, cut in half and then wedges
1 ripe avocado, cut in half and sliced
1 small heirloom tomato, cut into wedges
Handful cherry tomatoes, sliced in half
3 cups mixed greens such as arugula, radicchio, spinach
handful fresh basil leaves
High quality olive oil
Aged balsamic vinegar
Flaked sea salt and fresh cracked black pepper
1 round of burrata (optional for dairy free)
Directions
Layer the greens, peach slices, nectarine slices and tomato slices, then cherry tomatoes and sliced avocado. Top with basil leaves, drizzle with balsamic, olive oil, sea salt and fresh cracked black pepper on top. Enjoy!
