Mint Cumin Lamb Chops
Serves 3 (2 chops per person)Ingredients
2 lbs lamb loin chops or rib chops
1/2 yellow onion, roughly chopped
1/2 cup fresh mint leaves
2 teaspoon ground cumin
2 cloves garlic, skin removed and smashed
1 teaspoon sea salt
3 tablespoons olive oil
flaky sea salt, for finishing
In a food processor, blend together the onion, mint, cumin, garlic, salt and olive oil.
Place the lamb in a shallow dish and pour the marinade on top. Using your hands make sure the marinade is coating all sides of the chops. Cover and let marinate for at least 2 hours in the fridge.
Remove excess marinade from the chops (leaving a small amount of marinade on will provide flavor). Preheat your grill plate or outdoor bbq to medium and oil the grill. Using tongs, place the chops onto the preheated grill. Cook for about 3 mins per side for medium rare.
Let rest for 5 minutes, top with finishing flaky salt and enjoy!
