Egg Bites

Ingredients
10 eggs
2 tbsp milk (almond or canned coconut milk)
1/2 orange or red bell pepper, diced small
1/4 cup spinach, roughly chopped
1 chicken sausage link, diced
Coconut oil spray
Salt and pepper, to taste
Directions
Preheat oven to 375F and spray a muffin tin with coconut oil.
In a medium bowl, add the eggs, milk and season with salt and pepper. Whisk together until completely combined.
Using a 1/2 cup measure, fill the muffin cups about 3/4 the way up. Top each cup of eggs with bell pepper, chicken sausage and then spinach.
Bake for 25 minutes, until the egg bites are set. Let cool and enjoy!
Store in an airtight container in the fridge for 5 days.
