Makes 2 servings
1 head romaine lettuce, thinly chopped
1/3 cup Castelvetrano olives, pitted and halved
1 vine ripe tomato, diced
10 slices salami, chopped
1 cup rotisserie chicken, diced
1/2 english cucumber, diced
2 tablespoons dijon mustard
2 tablespoon honey
1/4 cup mayonnaise
2 tablespoons apple cider vinegar
Salt and pepper to taste
In a large bowl, combine the chopped romaine lettuce, olives, tomatoes, salami, chicken, and cucumber.
In a separate small bowl, whisk together the dijon mustard, honey, mayonnaise, and apple cider vinegar and season to taste.
Drizzle half the vinaigrette over the chop salad and toss gently to coat all the ingredients. Add more dressing as needed.
Divide the salad into two serving bowls and enjoy!
