Chicken Salad Lettuce Cups

Ingredients
2 cups cooked chicken breasts or thighs (rotiserrie chicken works great!), diced into small cubes
2 stalks celery, small dice
2 tablespoons minced parsley
1/4 cup red onion, small dice
1 small apple, small dice
1/3 cup avocado oil mayonnaise
salt/pepper
1 head butter lettuce, leaves removed from root
Directions
In a large bowl, add all the ingredients except the lettuce. Stir together until evenly combined and taste to adjust seasoning. Serve in lettuce leaves or in a wrap!
