Makes one sandwich
2 slices @baseculture paleo gluten free bread
2 tablespoons @primalkitchen avocado mayo
1/2 medium heirloom tomato, sliced
1-2 butter lettuce leaves
1/2 avocado, thinly sliced
2 slices bacon
sea salt/fresh cracked black pepper
Add the bacon in a medium sized skillet and place on the stovetop over medium heat. Cook for about 4 minutes on the first side and 3 minutes on the second side until desired crispiness. Transfer to a paper towel lined plate and let cool.
Add two slices of bread to the skillet with the bacon fat. Once golden brown on once side, flip to the other side and brown as well. Transfer to a plate.
Add a tablespoon of mayo to each slice of bread and spread evenly. Top one slice of bread with with lettuce, avocado, bacon and sliced tomato on top. Season tomato with freshly cracked black pepper and sea salt. Add the second slice of bread on top and slice down the middle. Enjoy right away!
