Makes 2 servings
Ingredients
Dressing:
3 tablespoons toasted sesame oil
2 tablespoons rice vinegar
2 teaspoons toasted sesame seeds
1 tablespoon coconut aminos
1 in fresh ginger, peeled and grated or minced
1 tablespoon honey (optional)
Salad:
1 large ripe avocado (or 2 small), pit and skin removed, cut into 1/2 in cubes
1 english or 4 persian cucumbers, cut in half and sliced about 1/4 in thick
2 scallions, trimmed and thinly sliced
Toasted sesame seeds, for topping
Directions
In a 8oz mason jar, add all the dressing ingredients. Add the lid on top and shake together.
In a large bowl, add the cucumber, avocado, scallions and the dressing on top. Gently stir together being careful not to mash the avocado. Top with sesame seeds and enjoy!
*this salad is better after sitting in the fridge for at least an hour!
